Mickey Mouse Waffle Recipe

Back in December my husband and I went back to Disney World for a much needed vacation. My husband had been working overtime for weeks, and I just finished my BA, so a vaycay was much needed, and felt way over due even though we just took off a week in October for our wedding/honeymoon. (By the way, I do not suggest at all to get married during your last semester of getting your degree. Super stressful.) This trip I had one thing in mind: try the Mickey Mouse waffles. Having food allergies makes trying all of the Mickey shaped foods in Disney a tad difficult, but I read from internet sources that the Kona Cafe at the Polynesian Resort offers allergy-friendly Mickey waffles. They do, and they certainly delivered.

The waffles exceeded my expectations. Crunchy on the outside, soft on the inside. Sweet. Vanilla-y. So decadent, and so perfect for a Christmas Day breakfast. (The French-pressed Kona coffee is also amazing, and I highly recommend it.) When we eventually returned home from our Disney World rendezvous, I had one lingering question on my mind:

How do I make these guys at home?

I tried. I failed. A lot. But after some research, I read that Disney uses Bob’s Red Mill pancake mix for their gluten-free, egg-free, dairy-free waffles. After tinkering around some more, I think I created a recipe that lays on the same flavor plane with Disney’s waffles.

And they’re good. Seriously.
